Chocolate Chip Banana Bread

  • 1-3/4 cups flour
  • 1 cup mashed ripe bananas (2 or 3 medium)
  • 1 tsp. baking soda
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1/4 cup milk
  • 1 egg
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup soft margarine spread (50% or more oil), melted

    Mix flour, baking soda and salt in large bowl. Beat egg in medium bowl; stir in margarine, bananas, sugar and milk until blended. Add to flour mixture; stir just until moistened. Stir in chips.

    Pour into greased 8x4-inch loaf pan.

    Bake at 350° F for 1 hour or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely on wire rack.

    Makes 1 loaf.
